<p>Summertime &#8211; Heidelbeer-time! Endlich gibt es wieder Heidelbeeren. Obwohl: Dank Peru und Spanien gibt es die ja mittlerweile das ganze Jahr über. Wen also nicht das schlechte Gewissen quält, wenn er Obst aus anderen Ländern isst (stellt sich jemand die Frage aus welchem Land sein Handy kommt?), kann also recht häufig in den Genuss dieses herrlichen Heidelbeer-Kuchen kommen.</p>

Damit der Mürbeteig seine typische Struktur erhält darf er nicht kaputt geknetet werden. Lieber darf man noch kleine Butterklümpchen von 1/2 cm Durchmesser im Teig sehen. Dafür ist die Ruhezeit umso wichtiger. Gerne darf der Teig am Vortag vorbereitet werden und über Nacht im Kühlschrank ruhen.</span></div></div>

<p>Wo die Heidelbeeren aus Peru herkommen weiß ich nur bedingt. Ich glaube aus der Wüste an der Küste. Aber bei Spanien weiß ich es recht genau: aus dem bezaubernden <a href="https://www.google.de/maps/@37.2214332,-6.7117219,31704m/data=!3m1!1e3?entry=ttu" target="_blank" rel="noreferrer noopener">Huelva</a>. Ich weiß noch, als ich einen der Pioniere des Heidelbeeranbaus, Ulf Hayler, in Spanien kennenlernen durfte. Eine berufliche, wie persönliche Bereicherung. Ebenso beeindruckend die Plantagen von der Familie Dittmeyer (ja, die vom Orangensaft). Was einmal klein angefangen hat, ist mittlerweile zu einer tragenden Kultur in der Region geworden. Ein zweites Standbein neben Orangen, Mandarinen und Erdbeeren. Lästig nur, dass der <a href="https://de.wikipedia.org/wiki/Nationalpark_Coto_de_Do%C3%B1ana" target="_blank" rel="noreferrer noopener">Nationalpark Doñana</a> in der Nähe nach all den Jahren seit dem <a href="https://es.wikipedia.org/wiki/Desastre_de_Aznalc%C3%B3llar" target="_blank" rel="noreferrer noopener">Grubenunglück</a> in der Kupfermine und dem damit verbundenen Umleiten des Hauptwasserzuflusses Guadiamar nach wie vor unter akutem Wassermangel leidet. Die Vertiefung des Guadalquivir bis Sevilla trägt ihr übriges dazu bei.</p>



<p>Wehe dem Landwirt, der nun an die letzten, verbliebenen Reserven an Wasser möchte. Aber ich denke: Lieber das Wasser für Heidelbeeren, Erdbeeren und Co. als für die nahegelegenen Ferienanlagen.</p>



<p>Und was den Heidelbeer-Kuchen betrifft: Über Jahre schlummerte in <a href="https://www.tastepurenature.de/wer-lesen-kann-der-kann-auch-kochen/">meiner Kladde</a> ein falsches Rezept. Mehrere frustrierte Versuche erbrachten nicht mein Lieblingsrezept-Resultat. Aber dank meiner Schwester konnte ich vor wenigen Jahren das eigentliche, ursprüngliche Rezept meiner Mutter (Oma Sigi) ergattern. Jetzt sind sie beide im Kochbüchlein verewigt. Und weil das Rezept auch ein Highlight bei den Kindern ist, darf es hier natürlich nicht fehlen.</p>



<p>Als Backform hat sich bei uns die gewellte Quiche-Form bewährt. Die sieht auch auf dem Tisch recht nett aus. Aber eine Springform geht natürlich auch.</p>
