Gleichbleibend ist jedoch dass sie eine Füllung (im spanischen &#8222;Sofrito&#8220;) auf Basis von Tomaten hat und ähnlich wie eine Calzone im Teigmantel gebacken wird.</p>

Auch kann man auf das Ei im Sofrito verzichten, nur muss dann entweder deutlich länger eingekocht werden, oder aber mehr Semmelbrösel verwendet werden. Kapern und Oliven sind optional, dass heißt man kann sie auch weglassen.</span></div></div>

<p>Gekocht wird &#8211; wie immer &#8211; mit <a href="https://www.tastepurenature.de/von-den-zutaten/das-olivenoel-1-teil/">Olivenöl</a>. Wichtig ist auch, dass die Tomaten sehr reif sind. Sollte es diese nicht geben, kann auch auf Dosentomaten zurückgegriffen, bzw. mit Tomatenmark nachgeholfen werden. Es empfihlt sich Spitzpaprika zu nehmen, da diese schneller gar werden. Bei Blockpaprika (&#8222;California&#8220;) verlängert sich die Kochzeit, und damit das Risiko, dass die Zwiebeln in der Zwischenzeit zerkochen. </p>



<p>Die Empanada mit Thunfisch lässt sich sowohl groß auf dem gesamten Backblech zubereiten. Aber auch als kleiner Fingerfood. Dafür den ausgerollten Teig mit Hilfe einer kleine Schüssel oder Ausstechringe in entsprechende Scheiben ausstechen. Mit einem Klecks von den Sofrito belegen, zuklappen und die Ränder gut verschließen. Ggf. die Ränder mit Eigelb bestreichen. Vielfach werden diese halbmondförmigen Empanada in Spanien frittiert. Doch wir bevorzugen die leichtere Variante aus dem Backofen.    </p>

<p>Die Regañá hat aufgrund der Einfachheit ihres Rezepts uralte Ursprünge. So sei &#8222;die Regañá ein typisch andalusisches Produkt, dessen Ursprünge tausend Jahre zurückreichen. Damals entdeckte man, dass durch die Erhitzung von Getreidesuppen ein Nahrungsmittel mit geringem Wassergehalt entstand, das auf den langen Reisen der Vergangenheit lange gelagert werden konnte&#8220;.</p>



<p>Regañá ist mit dem Seegebäck verwandt, für das Sevilla ein wichtiges Produktionszentrum war. Diese harten Brotzubereitungen, die auch als &#8222;Biskuits&#8220; oder &#8222;Bizcochos&#8220; bezeichnet wurden, bildeten die Grundlage der Schiffsnahrung. Im Gegensatz zu normalem Brot waren sie wochenlang haltbar. Wenn sie richtig gegen die Feuchtigkeit des Meeres isoliert wurden, waren sie unverderblich. Die Regañadas sind ein direktes Erbe dieses Seegebäcks, das im Zeitalter der Entdeckungen Seefahrer, Entdecker und Eroberer auf ihren langen Seereisen begleitete. Ihr geografischer Ursprung ist nicht vollständig geklärt, obwohl sie mit Alcalá de Guadaíra in Verbindung gebracht werden, einer Stadt östlich von Sevilla, die für ihre Backtradition bekannt ist &#8211; so sehr, dass sie den Beinamen &#8222;Alcalá de los Panaderos&#8220; (Alcalá der Bäcker) erhielt. Die Regañá wird in Bäckereien von Salteras bis Córdoba hergestellt.</p>



<p>Der Name leitet sich von dem Geräusch ab, das es macht, wenn man hineinbeißt (daher der Ausdruck &#8222;a regañadientes&#8220;), und in anderen hispanischen Ländern bezieht sich regañada auf Brotzubereitungen, die ebenfalls dünn und knusprig sind, wie die mexikanischen regañadas.</p>

<h2 class="wp-block-heading">Und was habe ich noch zu sagen?</h2>



<p>Bei uns gehören Regañá einfach zu <a href="https://www.tastepurenature.de/kochen/hummus-ein-orientalischer-gruss/">Hummus</a> und <a href="https://www.tastepurenature.de/kochen/salmorejo-eine-kalte-tomatensuppe-fuer-heisse-tage/">Salmorejo</a> dazu. Am Besten backt man direkt die doppelte oder dreifache Menge. Abnehmer finden sich viele. Nur muss man sie dann in jedem Fall Luft- und Wasserdicht aufbewahren, damit sie kross und knusprig bleiben. Man kann auch auf den Sesam verzichten, aber geschmacklich gehört er zu den Regañá dazu. Schön werden sie auch, wenn man den Teig mit einem gewellten Nudel-Rundmesser schneidet. </p>

<p>Seit kurzem geben wir etwas Joghurt hinzu, was dem Hummus eine feine säure und sämige Konsistenz verleiht. Seitdem verzichten wir auf die Zitronen. Natürlich kann man die Kichererbsen auch getrocknet kaufen, über Nacht einweichen lassen und dann weich kochen. Doch geht es mit denen aus der Dose erheblich schneller. Vor allem wenn man für spontane Familienfeiern im Sommer improvisieren muss.</p>

Der Hummus sollte eine feste, cremige Konsistenz erhalten und nicht zu flüssig sein. Gerne kann man auch noch mit ein paar Spritzer Zitrone abschmecken.</span></div></div>

<p>Fürs kochen nehme ich &#8211; wie fast immer &#8211; das <a href="https://castillodesolera.com/" target="_blank" rel="noreferrer noopener">Olivenöl aus Solera</a>. Es ist dank der Sorte Picual und der extremen Höhenlage (1300 m) sehr kräftig und ausdrucksstark. Da es beim Mixen bitterer wird, sollte man dem Hummus ggf. etwas Zeit geben, um einen etwas milderen Geschmack zu erhalten. Wer es weniger kräftig mag, sollte stattdessen auf ein <a href="https://www.tastepurenature.de/2023/07/03/das-olivenoel-1-teil/">Olivenöl</a> der Sorte Alberquina, oder aber aus dem Tal des Guadalquivir zurück greifen (z.B. das <a href="http://www.aceitesbucoli.com/principal/" target="_blank" rel="noreferrer noopener">Bucoli</a> aus Bujalance). </p>



<p>Sicherlich kann man Hummus in allen möglichen &#8211; und unmöglichen &#8211; Versionen im Supermarkt kaufen. Da er aber so schön einfach ist, lohnt es sich gar nicht. Zumal der Selbstgemachte einfach viel besser schmeckt. Und man die Zutatenhoheit behält. Wenn von einem Potaje noch ein Rest von Kichererbsen und Brühe übrig geblieben ist, kann man auch hieraus einen erstklassigen Hummus herstellen. Was oben im Rezept fehlt, weil es nicht unbedingt in unserem alltäglichen Vorratsschrank fällt, ist Tahini. Diese Sesampaste gehört zu dem <a href="https://en.wikipedia.org/wiki/Hummus">ursprünglichen Gericht im östlichen Mittelmeer</a> untrennbar dazu. </p>

<p>Einige vermuten die Ursprünge dieser Suppe bei den Römern, dort jedoch als &#8222;weiße&#8220; Version. Denn rot wurde die Salmorejo durch die Tomate, welche erst nach 1492 den Weg in die europäische Küche gefunden hat. Darf man den Geschichtsschreibern glauben, war es Bernal Díaz del Castillo, der während der Eroberung Mexicos durch Hernán Cortés dort die Tomaten &#8222;entdeckt&#8220; hat. Also irgendwann zwischen 1519 und 1526. Bis es diese dann in die Gärten Andalusiens und in die Töpfe der spanischen Hausfrauen geschafft hat, wird auch so seine Zeit vergangen sein. </p>



<p>Tatsächlich hat es offenbar an den Anfang des 20 Jahrhunderts gebraucht, bis jemanden eine Tomate in die Salmorejo gefallen ist. Auch die Tatsache, dass man für die gewünschte Konsistenz einen Pürierstab oder Mixer benötigt, lässt die Ursprünge doch sehr nahe an &#8222;unsere&#8220; Zeit kommen. Im lesenswerten, <a href="https://es.wikipedia.org/wiki/Salmorejo">spanischen Wikipedia-Eintrag</a> hat sich eine Autorenschaft recht viel Mühe gegeben, den Ursprüngen der Salmorejo auf den Grund zu gehen. Auch der cordobesische Aquarell-Künstler Rafael Obrero hat das Rezept auf seine <a href="https://rafaelobrero.wordpress.com/2015/03/05/salmorejo-gazpacho-y-otros-secretos-ilustrados/">unverwechselbare, schöne Art</a> festgehalten.  </p>



<p>Sicherlich trägt das Brot seinen Teil zur cremigen Konsistenz bei. Doch der wesentliche Anteil kommt durch die hohe Menge an Olivenöl. Dank des elektrischen Mixers wird dieses quasi zu eine Mayonnaise emulgiert. Insofern trägt die Qualität und die Art des Olivenöls wesentlich zum Geschmack der Salmorejo bei. Also nichts x-belibiges oder minderwertiges verwenden.   </p>
