Doch neulich musste der sommerliche Geburtstag der Jüngsten in einem <a href="https://www.aminess.com/de/aminess-gaia-green-villas">Tiny-House</a> an der kroatischen Adriaküste verbracht werden.  Es gab zwar einen Herd und einen Kühlschrank aber keinen Ofen. Herd ausschalten und die Gelatine durch die Resthitze unter Rühren schmelzen lassen. <h2 class="wp-block-heading">Die Not macht erfinderisch</h2>



<p>In Ermangelung an Puderzucker, bzw. wegen eines Überschuss an Haushaltszucker, der prallen Sonne am Mittelmeer, gepaart mit den sommerlichen Temperaturen kam mir eine Idee: Mit Hilfe eines Spargelschälers eine Zitrone schälen. Die Schale auf einem Teller in der prallen Sonne durchtrocknen lassen. Die getrocknete Schale zusammen mit dem Zucker fein vermahlen. Und fertig ist der Zitronenzucker. </p>



<p>Der Zitronenzucker eignete sich nicht nur hervorragend als Belag für den Cheesecake. Er ist auch eine tolle Basis für eine Zitronenbrause! </p>



<h2 class="wp-block-heading">Cheesecake oder Käsekuchen?</h2>



<p>Beiden ist gemeinsam, dass Frischkäse oder Quark als Basis verwendet wird. Während der amerikanische Cheesecake jedoch als <a href="https://de.wikipedia.org/wiki/K%C3%A4sesahnetorte">Käsesahnetorte</a>  ohne Backen auskommt (sofern man auf die Kekse zurückgreift und sich nicht die Mühe eines selbstgemachten Mürbe- und Biskuitteig macht), ist der klassische Käsekuchen ein feines Gebäck aus dem Ofen. Gerade von letztem gibt es europaweite Variationen. Über den klassischen Käsekuchen findet sich auf Wikipedia folgende Passage zu dessen Entstehungsgeschichte:</p>

Athenaios&#8216; Werke zählen zu den wichtigsten Quellen für die antike Küche, da er sich auch auf viele weitere Schriftsteller bezieht, deren Werke jedoch verloren gegangen sind. In seinem Werk <em>Gastmahl der Gelehrten</em> (<a href="https://de.wikipedia.org/wiki/Altgriechische_Sprache">altgriechisch</a> Δειπνοσοφισταί <em>Deipnosophistaí</em> zu <em>deĩpnon</em> ‚Mahl‘ und <em>sophistḗs</em> ‚Gelehrter‘) übermittelt er unter anderem die folgende überlieferte Geschichte: <a href="https://de.wikipedia.org/wiki/Xanthippe">Xanthippe</a>, die Ehefrau des Philosophen <a href="https://de.wikipedia.org/wiki/Sokrates">Sokrates</a>, sei während eines ihrer sprichwörtlich gewordenen <a href="https://de.wikipedia.org/wiki/J%C3%A4hzorn">Zornausbrüche</a> auf einem Käsekuchen herumgetrampelt. <a href="https://de.wikipedia.org/wiki/Alkibiades">Alkibiades</a> hatte diesen Käsekuchen an Sokrates schicken lassen. Sokrates reagierte auf <a href="https://de.wikipedia.org/wiki/Lakonisch">lakonische</a> Weise, nun hätte auch sie keinen Anteil mehr an dem Kuchen.</p>



<p>Weiterhin berichtet Athenaios von&nbsp;<a href="https://de.wikipedia.org/wiki/Demetrios_von_Skepsis">Demetrios von Skepsis</a>, der in seinem Kommentar zu den&nbsp;<a href="https://de.wikipedia.org/wiki/Troja">Trojanern</a>&nbsp;in der&nbsp;<a href="https://de.wikipedia.org/wiki/Ilias">Ilias</a>&nbsp;des&nbsp;<a href="https://de.wikipedia.org/wiki/Homer">Homer</a>&nbsp;ein Dorf erwähnte mit dem Namen „Käsekuchen“ (<a href="https://de.wikipedia.org/wiki/Altgriechische_Sprache">altgriechisch</a>&nbsp;πλακοῦς&nbsp;<em>plakoũs</em>&nbsp;‚Platte‘), nahe bei&nbsp;<a href="https://de.wikipedia.org/wiki/Theben_(B%C3%B6otien)">Theben</a>&nbsp;gelegen.</p>



<p>Schließlich zitiert Athenaios <a href="https://de.wikipedia.org/wiki/Kallimachos">Kallimachos</a>, der als Begründer der wissenschaftlichen <a href="https://de.wikipedia.org/wiki/Philologie">Philologie</a> gilt. Kallimachos habe mehrere Schriften mit Käsekuchenrezepten erwähnt, darunter eines von <a href="https://de.wikipedia.org/w/index.php?title=Aigimios_(Mediziner)&amp;action=edit&amp;redlink=1">Aigimios</a>, vermutlich ein griechischer Arzt, eine <em>Schrift das Kuchenmachen betreffend</em> (<a href="https://de.wikipedia.org/wiki/Altgriechische_Sprache">altgriechisch</a> πλακουντοποιικόν σύγγραμμα <em>plakountopoiikón sýngramma</em>). Aigimios lebte wahrscheinlich wie <a href="https://de.wikipedia.org/wiki/Hippokrates_von_Kos">Hippokrates</a> zwischen dem 5. und dem 4. Jahrhundert v. Chr.</p>



<p>Für denselben Zeitraum wird die Beliebtheit eines Käsekuchens aus <a href="https://de.wikipedia.org/wiki/Quark_(Lebensmittel)">Quark</a> oder Sauerrahm im antiken Griechenland bezeugt. Die <a href="https://de.wikipedia.org/wiki/R%C3%B6misches_Reich">Römer</a> übernahmen die Zubereitung von den Griechen. Entsprechende Rezepte sind aus der Sammlung von <a href="https://de.wikipedia.org/wiki/Marcus_Porcius_Cato_der_%C3%84ltere">Cato dem Älteren</a> überliefert.</p>



<p>Ein Rezept aus dem späten&nbsp;<a href="https://de.wikipedia.org/wiki/Mittelalter">Mittelalter</a>&nbsp;stammt aus dem französischen Kochbuch&nbsp;<em><a href="https://de.wikipedia.org/wiki/Le_Viandier">Le Viandier</a></em>&nbsp;aus dem 14. Jahrhundert. Das älteste moderne (deutschsprachige) Käsekuchenrezept enthält das Kochbuch von&nbsp;<a href="https://de.wikipedia.org/wiki/Anna_Wecker">Anna Wecker</a>&nbsp;aus dem Jahr 1598. Als Zutaten gab sie neben Quark Eier, Zucker, Butter und&nbsp;<a href="https://de.wikipedia.org/wiki/Zimt">Zimt</a>&nbsp;an. Das&nbsp;<em>Vollständige Nürnbergische Kochbuch</em>&nbsp;enthält 100 Jahre später gleich mehrere Rezepte für „Eyer-Käß-Dorten“. Im Jahr 1845 wurde Käsekuchen wie folgt beschrieben:</p>

<p>Ebenso wie bei den Pfannkuchen (also den Richtigen, nicht denen aus Berlin), kann man sich hervorragend über den Belag streiten: herzhaft mit Schinken und/oder Käse, oder süß mit Nuss-Nugat-Creme, oder einfach nur mit Puderzucker.</p>



<p>Ich bin ja der Fan von Crêpès mit Apfelmus. Was meine Kinder mögen, kann sich jeder denken. Und bestimmt lässt sich das Rezept auch so anpassen, dass man es mit <a href="https://www.tastepurenature.de/von-den-zutaten/das-olivenoel-1-teil/">Olivenöl</a> nachkochen kann.</p>

<p>Das Tolle an dem Kuchen ist, dass er so schön saftig ist. Das kommt natürlich durch die Limo. Eigentlich ist es egal, ob man ihn als Zitronenkuchen mit Zitronenlimonade, oder als Orangenkuchen mit Orangenlimonade macht. </p>



<p>Da die Limo schon recht viel Zucker enthält, kann man natürlich mit der Zuckermenge weiter herunter. Eine Tasse würde sicherlich reichen. Wie bei allen Anderen sollte auch bei diesem Zitronenkuchen der Zucker gelöst werden. Das macht sich hinterher beim Essen sehr positiv bemerkbar. Einfach den Zucker vorher in den &#8222;flüssigen&#8220; Zutaten langgenug rühren, bis die Körner nicht mehr zu sehen sind. </p>



<p>Die Limo würde ich nicht zu lange rühren, um nicht die ganze Kohlensäure herauszuschlagen. Diese macht den Zitronenkuchen nämlich hinterher <a href="https://www.google.de/search?q=Mineralwasser+beim+Backen">schön locker</a>. Andererseits kommt die Säure des Kuchens dem Backpulver zu gute: Hierdurch wird später umsomehr CO<sub>2</sub> beim Backen <a href="https://de.wikipedia.org/wiki/Natriumhydrogencarbonat">freigesetzt</a>.</p>



<p>Hier mache ich den auf einem Blech, aber in einer Kuchenform geht es natürlich auch. Bei anderen Formen sollte man die <a href="https://www.bing.com/search?q=St%C3%A4bchenprobe">Stäbchenprobe</a> machen. Meine bisherigen Erfahrungen haben gezeigt, dass der Kuchen in Kasten- oder Gugelhopf-Form eher zu trocken wird. Wenn der Zitronenkuchen nicht auf dem Blech serviert werden soll &#8211; macht vor allem Sinn, wenn man ihn für eine Vereins-Cafeteria macht -, dann legt man am Besten  das Backblech mit Backpapier aus. So kann man ihn leichter vom Blech heben. Ohne Backpapier das Einfetten und Bemehlen nicht vergessen!</p>



<p>Als Öl nehme ich immer &#8222;unser&#8220; <a href="https://www.tastepurenature.de/von-den-zutaten/das-olivenoel-1-teil/">Olivenöl</a>. Doch geschmacklich neutrales Sonnenblumen- oder Raps- oder Distelöl geht natürlich auch. </p>
