<p>Tiramisu ist sicherlich der Klassiker unter den Desserts. Kaum ein Restaurant kommt ohne ihn aus. Doch wir machen es etwas &#8222;leichter&#8220;: mit Magerquark, Frischkäse und Sahne. Immer noch eine Bombe. Aber definitiv sehr lecker. </p>



<h2 class="wp-block-heading">Ist Tiramisu gar Französisch?</h2>



<p>Tiramisu ist sicherlich sehr Italienisch, aber liegen seine Wurzeln im schönen Paris. So war es <a href="https://de.wikipedia.org/wiki/Marie-Antoine_Car%C3%AAme">Marie-Antoine Carême</a>, welcher mit seiner kalten &#8222;Charlotte à la parisienne&#8220; den Grundstock legte. Auf Seite 446 seines Buches <a href="https://books.google.de/books?id=R_aqIQ3JKqcC&amp;hl=de&amp;pg=PA446#v=onepage&amp;q&amp;f=false">Le Pâtissier royal parisien</a> beschreibt er anschaulich: </p>

<p>Es waren <a href="https://de.wikipedia.org/wiki/Tiramisu#Geschichte">findige Köche aus dem Venetien</a>, welche die Bayerische Creme durch Mascarpone ersetzten und den Biskuit mit Kaffee und Marsala durchweichten. Und geboren war das Tiramisu. Wie jedoch in unserer Version der Quark hinzu kam, wissen wir nicht. Vielleicht war es Oma Siggi. </p>

<p>Für Kinder und Andalusien hatte ich mich an eine Alkohol- und Kaffeefreie Variante versucht: Anstatt des Kaffees habe ich auf echten Kakao zurückgegriffen. Der ist ebenfalls etwas bitter und passte ganz gut. Auf den Alkohol wurde einfach verzichtet. Ebenso auf das Ei. Sicherlich konnte Man(n) und Kind es essen, aber es ist nicht das Selbe.       </p>



<p>Neulich brachte meine bessere Hälfte eine sommerliche, fruchtige Alternative mit nach Hause. Wir nennen sie einfach &#8222;<a href="https://www.tastepurenature.de/kochen/charlotte-mit-beeren-und-feiner-zitrusnote/">Charlotte aux baies et à la fine note d&#8217;agrumes</a>&#8220; oder auf Deutsch: Charlotte mit Beeren und feiner Zitrusnote. Denn sie bringt diverse frische Beeren mit und der Biskuit wird mit Orangensaft getränkt.</p>



<h2 class="wp-block-heading">Vorsicht Ei!</h2>



<p>Ob mit Früchten, Mascarpone oder Quark, die Kühlung ist in jedem Fall einzuhalten! Es wird mit rohen Eiern gearbeitet. Es besteht die Gefahr vor Samonellen. Das BVL <a href="https://www.bvl.bund.de/DE/Arbeitsbereiche/01_Lebensmittel/03_Verbraucher/03_UmgangLM/02_LMzubereiten/03_Eier/lm_zubereitung_eier_node.html">schreibt in seiner Empfehlung</a> im Umgang mit Eiern: </p>

<p>Durchfallerreger können vor allem auf der Eischale vorhanden sein. Rohe Eier oder aus ihnen hergestellte Speisen wie Mayonnaise oder Tiramisu, können somit Quelle von Infektionen sein, häufig ausgelöst durch Campylobacter oder Salmonellen.</p>



<p>[&#8230;] Um mögliche davon ausgehende Risiken zu vermeiden ist der hygienische Umgang mit Lebensmitteln wichtig: Durch gründliches Erhitzen von Eiern oder Eiprodukten können die meisten Infektionen vermieden werden. Tiramisu und Mayonnaise sollten frisch verzehrt und auch bei guter Kühlung nur wenige Stunden aufgehoben werden.</p>



<p>Beim Kontakt mit Eiern und Eierschalen sollten vor und auch während der Zubereitung von Mahlzeiten die Hände mit warmem Wasser gewaschen werden. Kochutensilien, die mit dem rohen Ei oder der Schale in Kontakt kommen, sollten zunächst heiß gespült werden, ehe sie mit anderen Lebensmitteln in Kontakt kommen.</p>

<p>Also immer schön penibel auf Sauberkeit achten! Ich wasche in der Regel vorher noch die Eierschalen kurz mit Schwamm und ein wenig Spülmittel ab. Und ja: nicht zu Lange im Kühlschrank lagern. Aber Reste bleiben zu Glück im seltensten Fall übrig.</p>

Auch kann man auf das Ei im Sofrito verzichten, nur muss dann entweder deutlich länger eingekocht werden, oder aber mehr Semmelbrösel verwendet werden. Kapern und Oliven sind optional, dass heißt man kann sie auch weglassen.</span></div></div>

<p>Gekocht wird &#8211; wie immer &#8211; mit <a href="https://www.tastepurenature.de/von-den-zutaten/das-olivenoel-1-teil/">Olivenöl</a>. Wichtig ist auch, dass die Tomaten sehr reif sind. Sollte es diese nicht geben, kann auch auf Dosentomaten zurückgegriffen, bzw. mit Tomatenmark nachgeholfen werden. Es empfihlt sich Spitzpaprika zu nehmen, da diese schneller gar werden. Bei Blockpaprika (&#8222;California&#8220;) verlängert sich die Kochzeit, und damit das Risiko, dass die Zwiebeln in der Zwischenzeit zerkochen. </p>



<p>Die Empanada mit Thunfisch lässt sich sowohl groß auf dem gesamten Backblech zubereiten. Aber auch als kleiner Fingerfood. Dafür den ausgerollten Teig mit Hilfe einer kleine Schüssel oder Ausstechringe in entsprechende Scheiben ausstechen. Mit einem Klecks von den Sofrito belegen, zuklappen und die Ränder gut verschließen. Ggf. die Ränder mit Eigelb bestreichen. Vielfach werden diese halbmondförmigen Empanada in Spanien frittiert. Doch wir bevorzugen die leichtere Variante aus dem Backofen.    </p>

Das reduziert die gesamte Kochzeit der Erbsensuppe um ein Vielfaches. Vor allem, wenn man wie wir den <a href="https://de.wikipedia.org/wiki/Schnellkochtopf">Schnellkochtopf</a> benutzt.</p>

Am Ende der Garzeit das Huhn aus der Brühe heben, enthäuten und klein zerfasern. Die Brühe kann z.B. für eine Suppe verwendet werden. Alles zusammen auf mittlere Hitze (Stufe 6/9-7/9) ca. <span class="wprm-timer" data-seconds="1200">20 Minuten</span> weich kochen. In der Zwischenzeit die <span class="wprm-inline-ingredient wprm-inline-ingredient-225-2 wprm-block-text-bold">7 Äpfel, säuerlich</span> schälen und entkernen, den <span class="wprm-inline-ingredient wprm-inline-ingredient-225-4 wprm-block-text-bold">1 Becher Walnüsse</span> mit einem großen Küchenmesser fein hacken. Die <span class="wprm-inline-ingredient wprm-inline-ingredient-225-7 wprm-block-text-bold">8 große Gewürzgurken</span> aus dem Glas nehmen und ebenfalls in kleine Würfel hacken. Am Ende der Kochzeit die Kartoffeln pellen, die Eier schälen und zusammen mit dem Sellerie, der roten Beete und den Äpfeln auf einer groben Reibe in die große Schüssel reiben. <p>Wie bereits an anderer Stelle geschrieben vergeht nahezu kaum eine Woche ohne einen Eintopf. Und es gibt kaum einen Eintopf ohne Hülsenfrüchte. Der &#8222;Star&#8220; unter unseren Eintöpfen sind sicherlich die Lentejas. Sie sind schnell und leicht gekocht. Und ganz wichtig: sie schmecken sogar den Kindern. Und auch dem Opa, wenn er uns zum Essen besucht. Nur führt die seit kurzem hinzugekommene Aubergine immer wieder für Gesprächsstoff. Der besseren Hälfte schmeckts, der Rest kann darauf verzichten.  </p>



<p>Vor allem ist es die große Portion <a href="https://www.tastepurenature.de/von-den-zutaten/das-olivenoel-1-teil/">Olivenöl</a> (ja, da ist es wieder), welche die Lentejas kräftig aufwertet. Sicherlich lassen sich auch Tellerlinsen verwenden, doch wir bleiben treu bei den <a href="https://www.linsensorten.de/pardinalinsen.php">Pardina-Linsen</a>. Die bleiben beim Kochen fester und schmecken besser.</p>



<p>Wie alle Linseneintöpfe schmecken auch die Lentejas hervorragend, wenn man noch einen paar Spritzer Essig in den Teller Suppe rührt. Ich habe die Hoffnung, dass hierdurch das Essen vor allem am Abend bekömmlicher wird. Ebenso darf man nach Belieben mit <a href="https://de.wikipedia.org/wiki/Harissa_(W%C3%BCrzmittel)">Harissa</a>-Pulver nachwürzen, nur sollte man es nicht übertreiben. Andernfalls hat man sonst ganz schnell eine Chili sin Carne. </p>



<p>Ein Problem stellt die Chorizo dar. Zum einen haben nur wenige deutsche Supermärkten diese im Programm, und dann meistens ohne große Auswahlmöglichkeiten. Oft kann lediglich zwischen &#8222;mild&#8220; und &#8222;scharf&#8220; entschieden werden. Wir nehmen dann immer die Milde. Und weil Chorizos in der Regel sehr fettig und viel Eigengeschmack haben, kochen wir sie separat vor. Schließlich sollen die Lentejas ja nicht nur nach der Wurst schmecken.  </p>



<p>Vermutlich könnte man sich das Vorkochen der Linsen schenken. Doch hierdurch dickt die Suppe später weniger stark ein. Und wenn man sieht, wie schnell das Kochen von Linsen im Vergleich zu Erbsen geht, dann lohnt sich der Griff zur Dose ehrlichgesagt überhaupt nicht. Die reichlich verwendeten Knoblauchzehen sind nicht jedermanns Sache, und sollten am Besten nach dem Kochen entfernt werden. Dadurch, dass man die Schale dran lässt, zerfallen die Zehen auch nicht. </p>

<p>Jede Woche mit Eintopf, und kein Eintopf ohne Hülsenfrüchte. Damit ist eigentlich schon alles gesagt, welchen Stellenwert dieses Gericht im familiären Kochbuch einnimmt. Hier ist die deutsche Variante vom Eintopf mit Hülsenfrüchten vorgestellt. Klassisch mit Bauchfleisch und Mettwürste. An anderer Stelle gibt es dann die Spanischen Lentejas und den Potaje.</p>



<p>Oma Sigi hat dieses Rezept von Oma Ruth. Von wem Oma Ruth es hat, lässt sich nicht mehr rückverfolgen. Früher gab es das Gericht immer Donnerstags zum Mittag. Dieser Tag war Putztag. Zeit um großartig zu kochen blieb keine. Deswegen wurde der Eintopf mit Hülsenfrüchten bereits am Mittwochabend vorbereitet. Am nächsten Tag schmeckt er sowieso viel besser. Doch war das Geschrei natürlich groß, wenn gerade im Sommer nach einem kräftigen Gewitter die Suppe von einem auf den anderen Tag &#8222;umgekippt&#8220; ist und einen stark sauren Stich bekam. Heute nutzen wir es schamlos aus, dass wir einen zweiten Kühlschrak nur für die auf Vorrat gekochten Gerichte haben. Das passiert in der Regel dann weniger.</p>



<p>Es lohnt sich den Eintopf mit Hülsenfrüchten gleich in großen Portionen zu kochen. Die Erfahrung hat gezeigt, dass die Reste am nächsten oder übernächsten Tag willige Abnehmer finden. </p>



<h2 class="wp-block-heading">Wenn es schnell gehen muss</h2>



<p>Um sich Arbeit zu sparen, nehme wir in dem Rezept die Hülsenfrüchte aus der Dose. Das hat den Vorteil, dass es schnell geht und gerade Erbsen oder Bohnen auch wirklich weich sind. Doch hat Dosengemüse sicherlich nicht den selben, intensiven Geschmack, wie selbst zubereitete Hülsenfrüchte. Nur verlängert sich hierdurch die Vorbereitungs- und Kochzeit durchs Einweichen und Vorkochen mitunter erheblich. </p>
